In the world of specialty coffee, another universe has opened up around the smallest and finest element of coffee brewing. The filter parier also makes modern brewing methods what they are. Each brewing method has its own. Whether for the Aero Press , for the Chemex or for the V60 - many manufacturers have released very special filter papers. They come in all sorts of shapes, sizes and thicknesses.

But which filter paper can you buy for which brewing method? And does your filter paper really affect the taste in the cup? Here you can find out everything about filter paper, how the filter types differ and what you should pay attention to when preparing it.

The history of filter paper

The filter paper as we know it today originally comes from Germany. In 1907, Melitta Bentz from Dresden was bothered by the coffee grounds in her cup. She then tried to filter her coffee better and tried out different materials. Until she finally cut a piece of blotting paper from her son's school notebook and placed it in the bottom of a tin can. The well-known Melitta filter bag was born. A year later, Bentz patented her new filter paper and founded a family business. The term filter bag is therefore protected for Melitta. All other manufacturers have to speak of “filter paper” or “paper filters”.

Buy the right filter paper for each brewing method

For our specialty coffee, we want a clear taste in the cup. Whether for the Aero Press, the Chemex or the V60 - you want to avoid flavors from the paper getting into the coffee through the filter. For a clear extraction, you should buy tasteless filter paper. Neutral filter paper gives your coffee the space to develop the unique and specific aromas of your bean without the paper's own taste being present.

Unbleached filter paper leaves more of a taste than bleached paper. That's why we recommend using bleached, white filter paper. You should also briefly rinse the coffee filter with boiling water before brewing. This removes the flavors from your filter. In addition to the material, filter paper mainly differs in its quality, size and thickness. The thickness of the filter paper affects how quickly the water flows through your filter. The speed in turn influences the extraction of the aromas from your coffee grounds. For example, thicker filters usually increase the extraction time. However, if the filter is too thick, it can trap too many coffee oils and particles, resulting in a bitter or over-extracted taste. The shape and size of the filter paper should of course also suit your favorite brewing method. There are cone-shaped paper filters for pour-over methods like the V60 hand filter. While for the Aero Press you need flat, small filter papers.

The classic V60 paper filter gets its name from its conical “V” shape and 60 degree angle. The paper filters ensure perfect control of the flow rate and water distribution. The original Hario Japan paper filters are made of oxygen-bleached, high-quality paper. The particularly fine pores and high density make them stand out compared to conventional coffee filters.

The paper filters are ideal for the Hario V60 porcelain coffee filter due to their tapered shape. They are available in two sizes, each of which fits the Hario V60 porcelain filter 01 and 02 respectively. Size 01 is well suited for brewing small quantities in the Hario hand filter. They are also compatible with the Origami S Dripper. The V60 filter paper from Hario in size 02 is suitable for 2-4 cups of coffee. The filter paper is also compatible with the Origami Dripper M.

Buy paper filters for the Chemex

The Chemex paper filter is a little thicker than traditional filter papers. It is extremely fine-pored and also oxygen bleached. Due to the thickness of the special filter paper, the natural suspended matter and oils in the coffee are perfectly bound and filtered out. This ensures a very aromatic cup of coffee without any bitter substances! The natural sweetness of the coffee also comes through here. It is not without reason that Chemex is considered its own preparation method! The way you fold the paper filter also has an impact on how you enjoy your coffee. A certain folding technique is particularly important with the Chemex. There should always be three layers on top of each other on the front side towards the spout and one layer on the other side. The different layers prevent the pouring channel from becoming clogged.

If you are using the pre-folded Chemex filters to make coffee, first open the filter so that it takes the shape of a bag. There are three layers of paper on one side of the filter and only one layer of paper on the other. Then place the bag in the filter holder of the Chemex so that the three-layer side is directly at the spout of the carafe. Don't forget to rinse and start brewing!
