The sugar cane process, which originated in Colombia where sugar cane grows in abundance, avoids destroying the bean's cellular structure and even enhances the sweetness of the finished cup! First, fermented molasses from sugar cane is used to produce ethanol. The alcohol ethanol is mixed with a natural acetic acid to produce the solvent ethyl acetate (EA). EA is also prominent in wine, beer, fruits and vegetables. The coffee beans are steeped in water, which increases the moisture content of the beans and releases caffeine from the structure. After soaking for a sufficient period of time, the beans are subjected to an EA wash that dissolves the caffeine. Finally, the beans are cleaned again with water, briefly exposed to steam to clean the inner parts of the beans, and then dried to the original moisture content. This process removes about 97% of the caffeine content. Due to the fermented molasses from the sugar cane, the Sugar Cane Process produces beans with a pleasant, clean and sweet taste!
