This exceptional coffee is grown at an altitude of 1700 m asl and consists of the well-known Villa Sarchi variety. It is processed using the special Black Honey method, a delightful twist on the traditional honey process. In this process, the cherries are carefully picked and sorted. The peel is then removed, leaving the sticky fruit material, the so-called mucielage, lags behind. The coffee is then dried on raised beds or patios, creating the Mucielage becomes dark and gives the process its name. The additional pulp increases the drying time, resulting in a truly unique and enticing flavor profile.
