Bitterness

Sweetness
Coffee’s link to fruitiness isn’t always obvious, but the beans are loaded with carbs and amino acids inherited from the coffee cherry. When roasted, these carbs become the building blocks of sweetness, like the simple sugars found in fruits. Our first filter coffee blend, called Tango, consists of two special specialty coffees in a ratio of 50% each: one from Finca El Zacatin in Colombia and one from Pau Brasil Farm in the Cerrado Mineiro region in Brazil.

Finca El Zacatin is a family owned coffee farm nestled on the western slopes of the Cordillera Mountains in the Antioquia region. Coffee farmer Eduardo Fernandez-Restrepo works closely with various agronomists and the Institute for Coffee Research in Colombia to procure exceptional coffee plants and process them using state-of-the-art methods.

The local coffee farms of Pau Brasil Farm are organized into cooperatives under the control of the Cerrado Coffee Growers Federation. The farm is run by Gildo Mantuan Neto and is located at an altitude of 1,000 meters. Coffees from the region are provided with a special seal that emphasizes the high quality standards in the cultivation and harvest of the coffees within the region. In addition, QR codes on the coffee sacks enable direct tracing back to the farm, which is an example of the transparency in Brazilian coffee cultivation.
