Located in Costa Rica's famed West Valley, Luis Jiménez Padilla's La Isla Farm is an 11-acre oasis named for the mountain it graces. What is special about the farm is its island-like location between two rivers. Coming from a coffee-growing family that has existed for generations, Luis has carefully selected special coffees that are ideal for the region, resulting in a minimal use of chemicals. The West Valley is known worldwide for its Arabica beans, prized for their harmonious acidity and body. Usually associated with Kenya, this SL 28 coffee has undergone the Red Honey process. After careful shelling, the beans were left to dry in the sun on raised beds for three weeks. This allows the coffee to bask in its natural sweetness while its mucilage dries, creating a unique flavor experience.
