Sweetness
Coffee’s link to fruitiness isn’t always obvious, but the beans are loaded with carbs and amino acids inherited from the coffee cherry. When roasted, these carbs become the building blocks of sweetness, like the simple sugars found in fruits. Through the Maillard reaction (roasting), they transform into the cozy sweetness we enjoy, reminding us of the cherry’s natural flavours.

Maldaner's Franz Espresso is produced by 74 strong women from the Colombian women's association El Trebol. These women work hard to manage both the harvesting of the green coffee and the administration of their farms. They use it to feed their families, all on farms between 0.38 and 2.5 hectares. They all grow the Castillo variety. The Franz espresso also gets its full-bodiedness and strength from the Canephora (Robusta) from Mexico from Finca Fulda. Rainer Böhme and his wife Ibbeth run the farm and attach great importance to sustainability, using little water and generating their electricity through a water turbine. But the best part is the close relationship between farmers and employees. There is even a school, a clinic and a soccer field on the farm for the employees and their families.

Are you a fan of classic espresso roasts? Then the Franz espresso from Maldaner is just right for you! Regardless of whether you prepare it from the portafilter machine, the stovetop pot or the fully automatic machine, it always has a full-bodied and strong character with a velvety mouthfeel. It also tastes of dark chocolate and the subtle sweetness of brown sugar. Perfect for all milk drinkers, but also for those who like to enjoy their espresso black. Tip for the preparation with the portafilter machine: 17.5g in, 41g out, 28 seconds at a temperature of approx. 93.3°C. Try it!
