Acidity

Bitterness
Like a pinch of seasoning, bitterness enhances coffee’s complexity. It is a balancing act with too little, the coffee may taste overly sweet or tangy. Robusta beans are naturally more bitter than Arabica due to the higher levels of these compounds. Light-medium roasts offer a pleasant bitterness, while darker roasts yield a stronger, lingering bitter sensation. Body
Refers to how a coffee feels in your mouth – it is like the weight and texture that you sense as you sip. Imagine it as the difference between whole milk feeling rich and creamy compared to skim milk feeling lighter. Body gives coffee a sense of substance and depth, making each sip a satisfying experience.
Sweetness
Coffee’s link to fruitiness isn’t always obvious, but the beans are loaded with carbs and amino acids inherited from the coffee cherry. When roasted, these carbs become the building blocks of sweetness, like the simple sugars found in fruits. Through the Maillard reaction (roasting), they transform into the cozy sweetness we enjoy, reminding us of the cherry’s natural flavours.

Finca Buena Vista and Finca Vizcaya are two notable coffee farms in Honduras. Finca Buena Vista, with a size of 10.5 hectares and located in La Paz near Marcala at 1,490 m altitude, employs 10 permanent workers and is run by 35-year-old farm manager Israel Urquia. The coffee on the farm is sold certified as "Do Marcala", which proves a guarantee of quality and proof of origin from La Paz/Marcala. Each bag is inspected by qualified Q Graders and given a numbered tag to ensure traceability back to the finca. The Finca Vizcaya is 190 hectares and is at an altitude of 1500-1740 meters. Owner Francisco Quezada and farm manager Oscar Garcia have worked on the farm's further development over the last 10 years, which has had a positive impact on quality and environmental protection. The farm also hosts 50 beehives to enrich the ecosystem and generate a second source of income. Varieties such as Matura, Red Bourbon, Bourbon and Pache are grown on the farm.

The Kalles No.1 Espresso is a special blend of two high-quality coffees from Honduras and Guatemala. The combination of 75% Buena Vista coffee from Honduras and 25% Vizcaya coffee from Guatemala results in a full-bodied espresso that is perfect for dairy drinks such as cappuccino, flat white or latte macchiato. The Kalles No.1 convinces with its chocolaty notes, which are supported by a light fruit component and a mild acidity. The Kalles No.1 espresso is also an excellent choice as a single shot.
