Acidity

In the historic coffee region of La Mazateca, the cultivation of the rare Typica and Bourbon varieties thrives despite their susceptibility to Roya. The farms take an organic approach, emphasizing minimal intervention and care for the impressive 2-3 meter tall, 40 year old Typica trees. Coffee cultivation takes place amidst a diverse agroforestry that integrates different tree species and complementary crops. The processing of the coffee takes place in careful steps, including an initial resting period of the cherries and occasional washing to remove low-density fruit. After hand sorting, fermentation takes place in wooden tanks for 24 to 72 hours, taking advantage of the region's cool nights to enhance the complexity of the flavor. Finally, the beans are dried in the sun on local terraces or rooftops to create a unique and rich coffee experience.
