Floral & light
Your coffee is sweet, light and carries a subtle fragrance similar to flowers. It combines fruity tones, bright acidity and a medium to heavy body.
Acidity

Bitterness
Like a pinch of seasoning, bitterness enhances coffee’s complexity. It is a balancing act with too little, the coffee may taste overly sweet or tangy. Robusta beans are naturally more bitter than Arabica due to the higher levels of these compounds. Light-medium roasts offer a pleasant bitterness, while darker roasts yield a stronger, lingering bitter sensation. Body
Refers to how a coffee feels in your mouth – it is like the weight and texture that you sense as you sip. Body gives coffee a sense of substance and depth, making each sip a satisfying experience.
Sweetness
Coffee’s link to fruitiness isn’t always obvious, but the beans are loaded with carbs and amino acids inherited from the coffee cherry. When roasted, these carbs become the building blocks of sweetness, like the simple sugars found in fruits. Testi Specialty Coffee took over the washing plant from AASH PLC in 2019 and is setting out to produce exceptional coffee in collaboration with local small farmers. These 750 producers grow their coffee at high altitudes, predominantly above 1,900 meters, with many of them using organic farming methods. Due to the small size of their operations, the families are closely involved in the entire process. They carefully hand-pick the ripe red cherries, which are then visually sorted for quality at the AASH washing station. After a 36- to 48-hour fermentation and a thorough wash, the parchment coffee is spread out on raised beds and takes about 7 to 11 days to dry. This careful approach ensures the production of high quality coffee at the high altitudes of Harrar.
