Hugo is a dedicated farmer who runs the La Vega farm with his family in the San Adolfo region of Huila. With a strong focus on continuous improvement, Hugo combines traditional farming techniques with newly acquired knowledge in barista craft, roasting and cupping. Faced with problems with coffee rust, he diversified his crop with the resilient Pink Bourbon variety, preserving a small batch of the prized Caturra. Thanks to the ideal climatic conditions and fertile soil, Hugo's coffee is characterized by its exceptional quality and diverse aromas. His exploration of various processing methods led to the development of a unique Pink Bourbon, which undergoes a meticulous anaerobic fermentation of 150 hours and a meticulous sun-drying of approximately 20 days, highlighting his tireless commitment to excellence.
