Acidity

Bitterness
Like a pinch of seasoning, bitterness enhances coffee’s complexity. It is a balancing act with too little, the coffee may taste overly sweet or tangy. Robusta beans are naturally more bitter than Arabica due to the higher levels of these compounds. Light-medium roasts offer a pleasant bitterness, while darker roasts yield a stronger, lingering bitter sensation. Keep in mind, that taste varies – what is bitter to you might be enjoyable to others.
Body
Refers to how a coffee feels in your mouth – it is like the weight and texture that you sense as you sip. Imagine it as the difference between whole milk feeling rich and creamy compared to skim milk feeling lighter. Body gives coffee a sense of substance and depth, making each sip a satisfying experience.
Sweetness
Coffee’s link to fruitiness isn’t always obvious, but the beans are loaded with carbs and amino acids inherited from the coffee cherry. When roasted, these carbs become the building blocks of sweetness, like the simple sugars found in fruits. Through the Maillard reaction (roasting), they transform into the cozy sweetness we enjoy, reminding us of the cherry’s natural flavours.

The families that are part of the Cafe Organico Marcala SA (COMSA) cooperative value high-quality, hand-picked coffee rather than mass production. Honduras offers excellent growing conditions for coffee due to the temperate climate and excellent soil in the high mountain regions. Most of the acreage is at an altitude of 1,500 meters and is managed by local small farmers who pride themselves on their premium coffee cherries. The cooperative is particularly proud of the two renowned seals of approval, Biolatina for organic cultivation and DOP Marcala for the protected region of origin.

Comsa Filter Honduras Organic Coffee is a unique combination of sweet mango notes and nutty peanut flavors coated in sweet chocolate. Hand-picked and hand-roasted, it is an organic specialty coffee from Central America that meets the taste of European coffee lovers. The gentle roasting preserves the nutty sweet notes of the Catuai coffee cherries and adds gentle chocolate tones that harmoniously round off the taste. With the aroma of an American roast and a subtle acidity, the Comsa is ideal for hand filter preparations, Chemex carafes or as filter coffee from the machine. A coarser grind for the French Press emphasizes the flavor of the specialty coffee even more.
