Acidity

Bitterness
Like a pinch of seasoning, bitterness enhances coffee’s complexity. It is a balancing act with too little, the coffee may taste overly sweet or tangy. Robusta beans are naturally more bitter than Arabica due to the higher levels of these compounds. Light-medium roasts offer a pleasant bitterness, while darker roasts yield a stronger, lingering bitter sensation. Located in São Paulo's Divinolandia terroir near Caconde, the Sitio Canaã farm is owned by João Hamilton. Committed to environmental responsibility, João has reevaluated his farming practices to produce coffee in a different way. Prioritizing quality over quantity, he has abandoned the use of agro-toxic chemicals. Through his involvement in the Bob-o-Link project, initiated by Fazenda Ambiental Fortaleza (FAF), João focuses on achieving the finest coffee quality while preserving nature. His sustainable agriculture practices include reforesting areas near water sources, recycling waste, and avoiding toxic fertilizers and herbicides. His dedication serves as an inspiring and hopeful example in the realm of coffee production.

In general, coffees from Brazil don't appeal to me too much. I'm not saying they don't taste good, their flavor profile rarely surprises me. But this one is different! This coffee has been my favorite morning coffee for many days in a row. It's incredibly sweet and has a super creamy body, leaving an aftertaste that lasts forever. This is a true feel-good coffee for everyone. And it tastes just like the strawberry cream candy I remember from my childhood!
