Acidity

Bitterness
Like a pinch of seasoning, bitterness enhances coffee’s complexity. It is a balancing act with too little, the coffee may taste overly sweet or tangy. Robusta beans are naturally more bitter than Arabica due to the higher levels of these compounds. Light-medium roasts offer a pleasant bitterness, while darker roasts yield a stronger, lingering bitter sensation. Keep in mind, that taste varies – what is bitter to you might be enjoyable to others.
Body
Refers to how a coffee feels in your mouth – it is like the weight and texture that you sense as you sip. Imagine it as the difference between whole milk feeling rich and creamy compared to skim milk feeling lighter. Body gives coffee a sense of substance and depth, making each sip a satisfying experience.
Sweetness
Coffee’s link to fruitiness isn’t always obvious, but the beans are loaded with carbs and amino acids inherited from the coffee cherry. When roasted, these carbs become the building blocks of sweetness, like the simple sugars found in fruits. Through the Maillard reaction (roasting), they transform into the cozy sweetness we enjoy, reminding us of the cherry’s natural flavours.

The coffee was grown in Sul de Minas, the southernmost region of Minas Gerais. Due to the climate, this state is the most important for coffee cultivation, since about 70% of Brazilian Arabica cultivation takes place here. The average temperature of 17-24 degrees Celsius is ideal for Arabica cultivation. Fazenda Passeio is one of the larger farms in the state and has been in the family for four generations. The farm manager, Adolfo Henrique Vieira Ferreira, attaches great importance to the social welfare of his employees by paying bonuses and supporting the infrastructure of the families. It also promotes content-related training. Since the fazenda cannot use harvesting machines due to the predominantly hillside location, the coffee cherries are picked by hand. However, Adolfo is convinced that this increased workload has a positive effect on the quality of the coffee.

A restrained acid structure sets the scene for the sweet notes of this coffee. With flavor nuances of nut and milk chocolate, it fulfills the classic profile of dry Brazilian coffee and convinces on every occasion, especially traditional coffee lovers: inside. The Yellow Catuaí cherries that make up this variety are typical of Brazil as they are yellow in colour. It is thought to be a natural cross between Red Bourbon and a spontaneous Typica mutation called Yellow Botucatu, from which Yellow Bourbon also gets its yellow cherries. The Yellow Catuaí variety is still very popular in Brazil due to its excellent quality.
