At Finca Paraiso-92, our own microbiological laboratory, a quality laboratory and a processing plant ensure careful processes. Starting with a rigorous selection and sterilization of the cherries, the coffee undergoes a controlled anaerobic fermentation with specific microorganisms. After pulping and a second phase of fermentation, the beans are sealed with hot and cold water to improve the organoleptic properties of the coffee.
