Acidity

Bitterness

This coffee is named after the Bombe Mountains, where many of the farmers involved live and work. Growers from the communities of Bombe, Shantawene and Keramo have been delivering their best cherries to the Bombe location since the 2017/18 harvest season. The Bombe facility allows for special processing techniques, including shaded fermentation tanks, washing troughs and shaded drying tables. The wet mill is managed by a dedicated team including an agronomist, Atkilt Dejene, and processing specialist Eyasu Bekele. Despite a capacity of 2.5 million kilograms of cherries, this location prioritizes quality over quantity. The coffee's unique processing method, inspired by a collaboration with Josue Morales of Los Volcanes Coffee in Guatemala, involves a dry fermentation method that results in a full and complex red fruit flavor profile while saving water and promoting environmental sustainability.
