The Swiss Water Process, developed in Switzerland in the 1930s and used for commercial production since the 1980s, was used to remove caffeine from the beans. This process is free of chemical solvents and decaffeines the beans very gently. The green coffee beans are first soaked in hot water to dissolve the caffeine. The water that soaks the beans is then passed through a charcoal filter to filter out only the caffeine, while leaving the sugar and other flavorings in the water. The result is a decaffeinated coffee with great flavor and without added chemical solvents.
