The term "Jilotepeque" comes from Nahuatl. Coffee has been grown in the region for over 200 years, harvested between January and April. The temperate climate and low rainfall make for excellent coffee conditions - this leads to the well-known taste of San Martin Jilotepeque, also known as "Antigua". Shade trees are pruned in February to get more light for flowering. Avocados, plums and plantains are also grown here. San Martin Jilotepeque is certified organic and enriched with compost and goat manure.
