Ruby Hills by Firstcrack is a fully washed espresso from Ruby Hills Farm in Mogok, Myanmar. Farmer Thiha Gyawalie is one of the youngest in Myanmar and produces an award-winning Catimor H528 there. The farm is located in southern Shan State and Thiha works there organically and certified. He also won the 2018 Myanmar Coffee Competition with 87 SCA points. Thiha is a coffee nerd who likes to experiment and is busy with new processing methods. After picking, the cherries are fermented for exactly 48 hours and then sun-dried for 3 weeks.

Ruby Hills is a clear and fresh single origin espresso with a fine fruity acidity, light sweetness and a balanced body. The taste is reminiscent of honey, cherries and a hint of cinnamon. First Crack recommends enjoying the coffee within 6 months.
