Acidity

The logo of Finca Las Mercedes shows the year 1886, which marks the year of their first coffee harvest. The finca has been family-run for five generations and is now run by Lucia de Ortiz and Silvia Ortiz. They only process ripe, bright yellow coffee cherries of the Yellow Icatu variety in their own Beneficio. The shade trees are Inga trees (Pepeto Peludo and Negro) and other native species.
