After harvesting, this filter coffee is sorted by grain density and placed in static boxes for 12 days. Cold air is blown into the boxes for the first three days. It is then dried for nine days at a temperature of 32 degrees until the humidity reaches 11%. After a 26-day rest period, the coffee is hulled in a dry mill, resulting in a fuller, fruitier and cleaner flavor profile.
