In 2011, the coffee farmers from Jaltenango joined forces to defeat the coffee rust catastrophe together. Finca El Flamingo blows the mind, and not just because of the name, which harks back to her love for the relaxing town of Celestún. Here in the Yucatán region on the north coast of Mexico it becomes the meeting place for migratory birds, flamingos and all kinds of waterfowl from November to April. Simply a paradise!
