Robusta beans are naturally more bitter than Arabica due to the higher levels of these compounds. Alberto Guardìa, a veteran coffee farmer with more than five decades of experience, oversees the family farm Hacienda Sonora, located on the fertile slopes of Costa Rica's famous Poas Volcano in the West Valley. Great emphasis is placed on environmental conservation at this picturesque farm, surrounded by pristine rainforest. They allow the rainforest to thrive alongside the coffee plants, creating an ideal environment for cultivation. The coffee trees thrive under the protective canopy of the shade trees and benefit from the optimal conditions. Notably, Hacienda Sonora operates on sustainable energy and uses a Pelton turbine powered by a nearby stream, providing 100% green energy. Our ongoing partnership with the Guardìa family, known for their unique, nature-loving approach to coffee, culminates in this year's Christmas coffee, and we thank you very much for their collaboration!
